2018 Pinot Noir

​

Appellation: Central Coast

Alc: 13.8%

TA: 0.56 g/100ml

pH: 3.70

​

This SIX26 Pinot Noir is packed with bright and juicy notes of black cherries, plums, clove, and subtle hints of orange meringue. This wine finishes off the palate with velvety tannins and essence of sweet toasty oak. The grapes were traditionally fermented until dry in stainless steel tanks. Roughly 50% were sent to oak barrels for secondary fermentation and aged between 8-12 months. The other 50% completed its secondary fermentation and aged in stainless steel tanks. This SIX26 Pinot Noir is ready to enjoy now or within the next seven to ten years.  Best enjoyed slightly chilled and paired with one of our delicious recipes found Here.

2019 Rosè

Appellation: Central Coast

Alc: 13.8% 

TA: 0.65 g/100ml

pH 3.2

​

This dry SIX26 Rosé is a summer wine that hits the palate with deep smooth layers of fresh strawberry, watermelon, and clean crisp minerality. This SIX26 Rosé was produced via the Saignée method - bleeding off excess grape juice from the must early in the winemaking process. The skin-contact method was then used by cold-soaking the de-stemmed grapes for 24 hours. After, they must be removed and pressed. 2018 Sauvignon Blanc

pH: 3.51 

TA: 0.55 g/100ml 

RS: 0.48 g/100ml

This Sauvignon Blanc is bright and refreshing with tropical characteristics including fresh pear, guava, and lime blossom, and hints of citrus. This wine pairs well with oysters or gnocchi with gorgonzola sauce. It is ready to drink now and should drink well for the next two to three years.

2017 Cabernet Sauvignon

pH: 3.69 

TA: 0.58 g/100ml 

RS: 0.07 g/100ml

On the palate you will experience notes of dark ripe berries that linger from a long-lasting finish. This wine is perfect with chili or red sauce pastas.
